| 1/3 cup dried pitted prunes 1 1/4 cups whole wheat flour 1/2 cup Equal spoonful 2 teaspoons baking powder 1/4 teaspoon salt 2 egg whites 2/3 cup skim milk 1/4 cup canola oil 1 1/4 cups cooked brown rice In small bowl, cover prunes with boiling water. Soak for 5 minutes or until plump. Drain well, finely chop and set aside. In mixing bowl, combine flour, Equal spoonful, baking powder and salt. In separate bowl, beat egg white, milk and oil. Stir in cooked rice and prunes. Add to dry ingredients all at once and stir just until flour is moistened. Spoon batter into muffin cups sprayed with non stick coating or paper cups. Bake in 400 degree F. oven for 20-25 minutes or until lightly browned. Makes 12 medium muffins Calories 97, protein 3g, fat 2g, carbs 17g Exchanges: 1 starch, 1/2 fat |
