Orange Marmalade
1 orange
1 cup water
1 tablespoon lo-cal pectin
1 tablespoon granulated sugar replacement

With a vegetable peeler, remove peel from orange. Combine orange peel and water in saucepan, bring to a boil, and boil for 3 minutes. Cut off membrane from fruit.

Place fruit, orange water (with peel) and pectin in blender or food processor. Work until completely blended. Pour into saucepan, bring to boil and boil for 1 minute.

Allow to cool slightly. Stir in sugar replacement. Pour into serving dish or jelly jar.
Chill.

Microwave: Follow directions using at least 1 quart microwave dish. Cook on high.

Yield: 1 1/4 cups
Calories 2 tablespoons: 10
Exchange 2 tablespoons: 1/5 fruit
