13 1/2 squares chocolate graham crackers
1 1/2 C. cold water
2 (1.4 oz. ea.) boxes sugar-free, fat-free, instant chocolate pudding mix
4 C. no-sugar-added, reduced-fat vanilla ice cream
2 T. mini chocolate chips
Arrange graham crackers on the bottom of a 9 X 13 glass pan. In a large mixing bowl, beat the water and pudding mix with an electric mixer on medium speed until well blended and super thick. Continue beating and mix in the ice cram. Beat until well blended. Spread over the graham crackers. Sprinkle with chocolate chips. 
Cover and keep refrigerated until ready to serve. 
Makes 16 servings. 
For diabetic exchange, each serving counts as 1 other carbohydrate.
