Cream Cheese Mints
3 oz package cream cheese (softened)
1 cup powdered sugar replacement
2 tablespoons water
1/2-1 teaspoon mint flavoring
food coloring as desired

Beat cream cheese until fluffy. Stir in sugar replacement, water, flavoring and food color. (Dough may be divided into parts and different flavorings and food color added to each part.)

Knead or work with the hand until dough is smooth.

Roll into small marble-sized balls, press each ball firmly into cavity of mould, and unmould onto waxed paper.

Yield: 60 pieces

Exchange 5 pieces: 1/3 fruit, 1/2 fat
