Blueberry Chutney
1 lb (1 1/2 pints, or 3 cups) frozen or fresh blueberries (if frozen, thaw)
1/2 cup chopped onion
1/2 cup sugar replacement
1/3 cup cider vinegar
3 tablespoons golden raisins
2 teaspoons chopped peeled gingerroot
1 teaspoon ground cinnamon
1/2 teaspoon mustard seeds
1/4 teaspoon ground cloves
1/8 teaspoon cayenne pepper

Combine all the ingredients with 1 cup water in a large non-aluminum saucepan. Bring to a boil over medium heat. Lower the heat and simmer, uncovered, for 1 hour, or until thick. Cover and chill to use within 1 week, or freeze for up to 6 months.
