Blueberry Banana Oat Bread
1 3/4 cups all purpose flour
1/4 cup quick cooking oats
2 tablespoons oat bran
1/2 cup granulated sugar (or replacement equivilent)
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons vegetable oil
1 egg
1 1/2 cups mashed bananas
3/4 frozen blueberries

Preheat oven to 350 degrees F.
Lightly grease a 9x5" loaf pan. I prefer the spray.

In a large bowl, stir together flour, oats, oat bran, sugar, baking powder and salt.

In a separate bowl, using an electric mixer, beat oil, egg and banana until combined. Pour wet ingredients over dry ingredients and stir until just combined.

Gently fold in frozen blueberries. Spoon into prepared pan.

Bake in preheated oven to 70-80 minutes or until a cake tester inserted in the center comes out clean. Let cool in pan on rack for 10 minutes. Remove from pan and serve warm.
