Apple Whole Wheat Muffins
1 1/4 cups all purpose flour
3/4 cup whole wheat flour
1/3 cup Splenda sweentener
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2/3 cup evaporated low fat milk - undiluted
1/3 cup apple juice
1/4 cup vegetable oil
1 egg
1 1/4 cups apples, peeled, finely diced (1 large apple)

Topping
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon

In medium bowl, combine flours, sugar, baking powder, cinnamon, and ginger. In small bowl, combine milk, apple juice, oil and egg; beat to blend in egg.

Add liquid ingredients to dry ingredients; stir just until moistened. Fold in apples. Spoon batter into 12 paper-lined muffin cups. Sprinkle with cinnamon sugar topping.

Bake in preheated 400F oven for 15 minutes or until toothpick inserted in center comes out clean.

Remove from muffin tin to cool.

Serving size: 1 muffin
