| 1/2 cup butter or margarine 1/2 cup rice flour 1/2 cup brown sugar--lightly packed 2 cups Crispy rice (crushed) 1 teaspoon almond extract 2 tablespoons almonds, chopped 1 egg This is a special recipe made without gluten. Crispy Rice is available from a food distributor or health food shop. Preheat oven to 350F. Cream butter and sugar together until light and fluffy. Add almond extract and egg. Beat well. Stir in flour, Crispy Rice and almonds. Shape into 1" balls and place on ungreased baking sheet. Press with a floured fork to flatten slightly. Bake for 12-15 minutes until lightly browned. Makes 24 servings Per serving: calories 65, fat 4g, protein 1g, carbs 6g, fiber trace, chol. 18mg, sodium 43mg Exchange per serving: 1 fat |
