| 20 Minute Chicken Parmesan | ||||||||||||||||||||||||||
| Makes 4 servings 4 chicken breasts, boneless, skinless--halved 1 egg, slightly beaten 1/2 cup crushed pork cracklings--or low cal breadcrumbs 2 tablespoons butter 1/2 cup tomato sauce 1/2 cup mozzarella cheese, shredded 1 tablespoon grated parmesan cheese 1/4 cup fresh parsley, chopped 1 tablespoon butter Using the palm of your hand, flatten chicken to even thickeness. Dip chicken into egg, then into crumbs to coat. In skillet over medium heat, in hot butter, brown chicken on both sides. Add tomato sauce. Reduce heat. Cover; simmer 10 minutes. Sprinkle with cheeses and parsley. Cover; simmer 5 minutes more or until cheese melts.
