Pretty Bar

Some of these recipes are extremely easy to make, but some of them are fairly difficult in that they take quite a bit of time and preparation. I love all these foods, and really enjoy cooking, some of these recipes were given to me by my family and friends, and some of them are recipes that I came up with on my own. I hope that you will enjoy cooking and eating this food as much as I do.

Broccoli & Cheese Casserole

2 cups Minute Rice� (cooked)
16 oz. chopped broccoli (cooked)
1 can cream of mushroom soup
1 can cream of chicken soup
2 cups grated cheddar cheese
� cup butter (melted)
4 eggs (beaten)
onion flakes (to taste)

Mix all ingredients. Pour into 1 � quart baking dish. Bake at 350� for 35 - 40 minutes.

Note - I discovered that cooking the broccoli and rice together in the microwave works well with this recipe.

Cheesy Potatoes

16 oz. frozen hashbrown potatoes (cubed not shredded)
1 tsp. salt
8 oz. sour cream
2 cup grated cheddar cheese
� cup butter (melted)
� tsp. pepper
1 can cream of mushroom soup
� small onion (chopped)

Mix ingredients and fill 9 inch x 13 inch baking pan. Top with 2 cups crushed corn flakes mixed with � cup butter (melted). Bake at 350� for 30 - 35 minutes.

 

Layered Dessert

1 cup flour
2 tsp. granulated sugar
� cup butter
� cup chopped nuts
� tsp. butter flavoring (optional)

Mix all ingredients and press into a 9 inch x 13 inch baking pan. Bake at 350� for 15 minutes.

8 oz. cream cheese
2/3 cup powdered sugar

Beat and spread as second layer.

7 oz. pkg. instant pudding*
2� cups milk
� tsp. almond flavoring

Mix all ingredients. Beat until the mixture is thick. Spread as third layer.

8 oz. Cool Whip
extra nuts

Spread Cool Whip as fourth layer. Sprinkle with nuts.

* I prefer to use pistachio flavored pudding, my brother likes chocolate with milk chocolate chips on the top. I have friends that have used butterscotch.

 

Peanut Butter Cookies

1 cup brown sugar
1 cup granulated sugar
1 cup peanut butter
1 cup shortening
1 tsp. baking soda
2 tbsp. hot water
2� cup all purpose flour
2 eggs
extra granulated sugar (probably less than � cup)

Mix  first 8 ingredients. Form into small balls (about 1 inch in diameter). Roll balls in extra sugar. Place on baking sheet, flatten with fork. Bake at 350� for 7 - 10 minutes.

Notes - Placing cookies on a cooling rack for cooling, this will keep the bottoms of them from over cooking.
Make sure the oven is preheated.
Instead of using a fork to flatten the cookies, use milk chocolate star candies.

Pot Pie

6 tbsp. butter
� cup all purpose flour
3 cups meat broth*
3 cups cooked cubed meat*
� cup chopped onion
16 oz. frozen mixed vegetables
1 oz. pimentos
3 medium potatoes (cooked and cubed)

Cook onion in butter, until onion is clear and tender. Add flour and stir until the mixture is smooth. Add broth and stir until the mixture is smooth. Cook until the mixture becomes thick and bubbly, this may take a while. Add remaining ingredients. Pour into pre-cooked pie crusts.

* Meats may be which ever meat that you prefer, just use the matching broth. I have found that I can use chicken broth with canned tuna though.

Sweet Potato Casserole

3 cups sweet potatoes
� cup butter
1 cup granulated sugar
� cup milk
1 egg

Cream butter, sugar and milk. Add remaining ingredients and mix well. Spread in baking dish.

1 cup brown sugar
� cup all purpose flour
� cup butter
� cup chopped walnuts

Mix above ingredients to make a mixture of fine crumbs. Sprinkle on top of potato mixture. Bake at 350� for 45 minutes.
