"OH NO! YOU'RE NOT GOING TO EAT US ARE YOU?"

Try these easy to make �Eggs In A Pocket�


You will need:
  • 4 warmed round pita bread pockets
  • 8 whole fresh eggs
  • 1 diced fresh tomato
  • 1 tsp. chopped fresh cilantro
  • 8 oz. freshly grated feta cheese
  • 2 tbsp. butter
  • salt and pepper to taste
This will serve four people easily.
In a mixing bowl, whip the eggs with a fork.
Add the fresh tomato and cilantro.
Have a non-stick skillet ready with melted butter on a medium high heat.
Pour in the eggs, tomato, and cilantro. Let this sit 'til they�re firm at the bottom. Turn what looks to be the start of a Frittata over and add the feta cheese to the top.
Do not allow the eggs to scorch.
When the eggs are cooked, cut into four wedges and slide one quarter into each warmed pita. There are some people who also like to add fresh alfalfa sprouts to this great breakfast sandwich.

Chef Sven�s Homestyle Hashbrowns

  • 4 fresh potatoes peeled and sliced in 1/4" thickness
  • 1 medium onion diced
  • enough olive oil to coat your fry pan
  • 1/2 stick of butter
  • pinch of seasoned salt

Wash, peel and boil potatoes until semi-tender. Drain and rinse under cold water in a colander to stop anymore cooking.
Heat your frying pan with the oil till almost smoking. Toss in the potatoes and onions. Fry to a golden brown. Add seasoning and butter, then reduce heat to warm until you're ready to serve with your eggs.
This should serve four people who will have happy faces when they're done eating.
Have somebody else wash the dishes, you made the breakfast after all.


�Corned Beef Hash and Eggs Anonymous�
When the other people eat this they'll say "Attaboy! I didn�t feel like going to the AA meeting anyway."

  • 1 15 oz. can of Libby's� Corned Beef Hash
  • 6 fresh eggs
  • 1/4 lb. butter, softened
  • Your favorite bread for toasting
  • some good strawberry or grape preserves, or both.
  • some really good Columbian coffee
  • a fruit juice if that's your preference

This is so so easy to do, and it's really good when you're hung over or drunk. Well it's also good when your neither of those.
Getcher fry pan hot and cook up the corned beef turning only occasionally. You are trying to make little patties here.
When browned on both sides, fire up the egg pan. Make the eggs over easy (and if you know how to flip eggs in a pan do it that way otherwise use a spatula), and top the crusty corned beef hash with the eggs. If you prefer to do poached eggs, that's fine too. I like 'em fried in butter thank you!
A really neat thing about the preserves or jellies that you use is they taste really good with the hash too. Mix it with the hash on your plate, you won't be sorry. It's yummy and not too time consuming.
By the way...drink your coffee and juice, sit down to your breakfast, and stop your whining about yesterday at work! Only you can fix that!
Also, don't worry about the dog getting to the milkman before he could get to your wife. I know. I was there...hee hee. I'm such a dog!

Chef Sven�s Simple Eggs Benedict


Relax. This is not that complicated and actually quite simple if you pay attention to the following recipe.


  • 1/2 pound butter, clarified and set to room temperature
  • 8 egg yolks (save the whites for a meringue or something)
  • 12 oz. sliced smoked Canadian bacon (2 oz. slices)
  • 6 toasted English muffins
  • 12 poached eggs
  • pinch of seasoned salt
  • dash of Tobasco
  • juice from one fresh lime

To make the Hollandaise you will need a stainless steel mixing bowl and a pot of boiling water. Make the sauce ahead of time.
Put the yolks in the bowl and set the bowl on top of the pot of boiling water creating a double boiler. With a wire wisk and stirring constantly, stir until the yolks get hot but not scrambled.
Set the bowl onto a wet towel that you have formed into a ring on the counter. This keeps the bowl from moving as you finish the procedure.
While still whisking, drizzle the clarified butter until a creamy texture results.
Add the lime, Tobasco, and seasoned salt. Set aside.

Now here�s how you poach the eggs:
You can use fried eggs if you are more comfortable with that, but I like to poach them for this recipe. Try it, you�ll get it right.
In a pot of boiling water add 1 tbsp. of white vinegar and 1 tsp. salt. This will keep the egg whites together. Stir the water briskly then add the raw eggs. You may want to do this four eggs at a time. With a slotted spoon remove each egg and top the buttered muffin half that has also been topped with the Canadian bacon. Ladle the Hollandaise onto each egg.
Serve with your favorite beverage. Beer is O.K. but champagne better.

�Sven�s Steak And Eggs With A Kick�

The cayenne pepper gives a bite so you might want to experiment first.


  • 1 6oz. ribeye steak
  • a pinch of McCormick� Montreal Steak Seasoning
  • a pinch of cayenne pepper
  • 2 eggs
  • 1/4 stick of butter


Rub the combined dry seasonings onto the steak. Pan fry in a non stick skillet till medium rare in 1/2 the butter at a medium heat. To make sure your steak comes out medium rare, drop in the eggs on the other side of the pan with the rest of the butter right when you turn the steak. Turn the eggs over when the whites are opaque. Let them cook another ten seconds, then remove the eggs and steak to your dish. Serve this with Svenny's hash browns and you'll be ready for anything!

By now these are antique French Toast slices. I'm sure the Frenchman who photographed this dish was a wee bit too drunk on a fine local wine to remember to load color film instead of black and white into his camera.
I did that a couple of times, and stopped purchasing black and white film just to be sure I was covered. Some photos would come out a little fuzzy at various parties, but that was the camera I think. That's O.K. though, because I'm a little drunk now as it is. So I'll just go ahead and give you this recipe for some really neat home made French Toast.
Just be careful, the dog likes it too and her whiskers tend to get all sticky.
Speaking of dogs and sticky...did you ever give your dog a peanut butter pallette?
It's fun to watch the look on the dog's face as it tries to dislodge the peanut butter off the roof of it's mouth.
Trust me, been there, done that!

�Chef Sven�s Cinnamon Toast To Die For�

  • 2 fresh eggs
  • 2 tbsp. half and half
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1/2� thick sliced bread (4 pieces or 8 regular sliced bread)
  • 1 stick unsalted butter
  • 6 oz. maple syrup
  • powdered sugar

Whisk eggs, vanilla, cinnamon, and half and half together in a bowl. Get your griddle to a medium high heat and use just enough butter to coat. Dredge the bread in the egg wash and put onto grill. While the toast is cooking, combine one quarter stick of butter with the syrup and warm. I use a microwave for this but you can also warm the syrup in the oven at 200�f. Flip the toast when It's a golden brown on one side. After the toast is done, sprinkle with powdered sugar and serve with reserved butter and syrup combination. YUM!
You can top this with your favorite warmed fruit compote if you like for an added sweet kick
Add some sausage and a couple of eggs over easy and you�ll love yourself all day.
