UNBELIEVABLY GOOD REDUCED-FAT MACARONI & CHEESE (Serves 8)

2cups elbow macaroni, uncooked
3cups fat free (skim) milk
2tablespoons all-purpose flour
1tablespoon chopped garlic (3-4 garlic cloves)
1tablespoon onion powder
1teaspoon salt
1teaspoon black pepper
2cups (8 ounces) sharp reduced-fat cheddar cheese Vegetable cooking spray


  1. Preheat oven to 350oF. Lightly spray 2-quart glass baking dish with vegetable cooking spray. Set aside. Cook macaroni according to package directions (omitting the addition of salt or fat); drain well. Pour into baking dish. Set aside.

  2. In medium saucepan over medium heat, stir together milk, flour, garlic, onion powder, salt and pepper. Stir until smooth. Add 1 1/2 cups of the cheese, stir; remove from heat.

  3. Pour cheese sauce over macaroni. Sprinkle remaining 1/2 cup of cheese on top. Bake 30 minutes or until brown and bubbly. Serve warm.

    Note: Macaroni and cheese is a complete protein therefore, serve with collard greens or other leafy green vegetable for a complete and nutritious meal.
