Recipe for September 30, 2001: ORANGE-HONEY ACORN SQUASH



Orange - Honey Acorn Squash (Serves 4)

cup orange juice
2ounces honey
1 teaspoon ground cinnamon
teaspoon ground nutmeg
1 acorn squash, halved lengthwise and seeded
2 tablespoons walnut meal (optional)
cup dried cranberries


  1. In a large saucepan, stir together orange juice, honey, cinnamon and nutmeg. Set aside.


  2. Place squash halves, cut side down, on cutting board and cut crosswise into �-inch thick slices. Add to saucepan with orange- honey mixture. Cover and simmer over medium heat 10 to 12 minutes or until squash is fork tender and orange-honey mixture coats squash. Stir in walnuts and dried cranberries. Serve warm as a side dish, snack or dessert.

Note: Raisins or dried cherries may be used in place of the dried cranberries.
