The best thing about homeschooling is ... being able to stay cuddled up on a cold winter morning and read about ancient civilizations.
The biggest challenge is ... suppressing my need to direct (control) the learning experience. My children learn soooo much better when I allow them to take a topic and run (research, read, discuss, and read some more). I am always trying to force step-by-step reading, writing, bla bla bla ... boring.
The best teaching tip I ever heard ... was to listen to your children. Try to build your curriculum around what they want to learn. You soon realize you are covering all the requirements plus.
My favorite quick and nutritious dinner is ... Stir fry chicken and veggies over rice. It only takes a few minutes to prepare and if you serve it with chopstix it can be fun eating. Start making your rice in a sauce pan. While the rice is cooking cut enough boneless chicken breast to feed your family into bite sized cubes. Then chop some green onion (scallion), any veggie you have on hand (broccoli, carrots, snow peas, ...) into bite sized pieces. Put a little olive oil in a wok or deep fry pan. When it gets hot enough add the chicken and most of the scallion (regular onions will do as well) and begin to saute with a little soy sauce. When the chicken starts to brown add veggies. Start with the longer cooking ones (carrots, broccoli). When you have all the veggies added, add some chicken broth and allow it to begin boiling. Then add a small amount of corn starch to water and pour it over the entire pan. Stir into the veggie/chicken until it forms a thick sauce. To serve make a bed of rice and spoon the chicken/veggie on top. It only takes about 20 minute start to finish. Next Page |
