Walking Salad

1 apple for each person
Approx. 3 tbls of peanut butter per apple
Peanuts, Pecans or Walnuts (shelled) Raisins
Sharp knife for cutting
Knives or spoons for spreading



Cut off top of apple. Carefully remove core of apple leaving peel over the the bottom of the apple. Scoop out pulp. Chop up apple pulp, nuts, and raisins. Mix with peanut butter. Stuff apple and replace apple top. Apple can be placed in zip top baggie and short piece of celery could be added to the baggie to use as a "scoop" to eat it with.

Variation: (1) Use cottage cheese instead of peanut butter (be careful of hot days). Add shredded carrots, raisins, nuts, or any vegetable chopped small. (2) Use cool whip (non-dairy) to mix with chopped fruit and stuff in apple.


OTHER SUGGESTIONS FOR "WALKING SALAD":

� � � Cut carrots, celery, green peppers into strips and put in ziploc bags for each person.
� � � Cut raw broccoli and/or cauliflower into pieces and place in bags for each person.
� � � Have a variety of cut up raw vegetables and let each girl choose what she will eat.
� � � Cut fruit into wedges (oranges, apples, or pears).
� � � Cut bananas into 3 pieces and leave the skin on.
