PACIFIC ROAST SHRIMP

2 tablespoons hoisin sauce

1 tablespoon dry sherry

1 clove garlic; minced

1 teaspoon gingerroot; grated

1 teaspoon low-sodium soy sauce

1/8 teaspoon cracked black pepper

1 lb jumbo shrimp (15 to 18 count); peeled & deveined


1. Combine hoisin sauce, sherry, garlic, gingerroot, soy sauce and pepper in a medium bowl. Add shrimp; toss to coat. Transfer to a 2-quart rectangular baking dish. Roast in a 425 degree oven for 8 to 10 minutes or until shrimp are opaque. Serve warm or chilled.
