Harvest Pumpkin
Pie
- 9" pastry shell, unbaked
- 1 can Pumpkin Pie Filling (19 oz, 540mL)
- 1 can Eagle Brand Sweetened Condensed Milk
- 2 eggs, beaten
- 1/2 teaspoon each of cinnamon, nutmeg & ginger (I
cheat and just put in about 3 tsp of Pumpkin Pie
Spice)
Preheat oven to 425ºF
- In a large bowl combine pie filling, Eagle Brand, eggs
& spices.
- Pour into prepared pastry shell
- Bake 15 minutes
- Reduce oven temperature to 350ºF. Bake an additional
35 to 40 min, or until a knife inserted near centre comes
out clean.
- Cool
- Garnish with Pastry Cut-Outs
Pastry Cut-Outs
- Cut decorative shapes from pastry trimmings.
Brush with a little milk. Bake on ungreased cookie shet in
400ºF oven 8-10 minutes. Cool.
