Boil wart and steep specialty grains, with NB hops for 1hr. Add Cascade after heat is off and stir (5 min.). Cool to ~70C with cooler water and add yeast. Ferments for ~6 days. Rack into secondary. Age for > 3 wks. |

All specialty grains are stepped for an hour. 1 hr. boil of wort. First batch of Cascade is boiled in the last 15 min. remaining. The second, 5 min. remaining. Let wort (heat off) sit to cool with cooler water addition, pitch yeast at ~70C. Primary: 8 days, secondary: 12 days. |
