Quick Vegetable Beef Soup

Ingredients:
      8 oz. lean beef
      1 onion, chopped
      1 clove garlic, minced
      5 potatoes, cut into 1" cubes
      2 c. beef or vegetable broth
      2 can diced tomatoes
      1 can sliced carrots with juice
      1 can cut green beans with juice
      2 cans mixed vegetables with juice
      1 jar small pearl onions with juice
      salt and pepper to taste

In the pressure cooker, brown beef with onion and garlic in 1 T. vegetable oil. Add the rest of the ingredients, except the pearl onions. Pressure cook for 10 minutes until the potatoes are done. Cool. Add pearl onions and serve.

This recipe makes a big pot of soup in about a half hour from start to finish. It is really easy and really good, served with warm bread or buns.

You can substitute frozen vegetables for the canned and it is just as good. Figure 2 cups frozen veggies for 1 can. This was one of those "desperation is the mother of invention" recipes. I had unexpected company show up one night about an hour before dinner and only had a small package of beef thawed that I had been planning on for dinner. Luckily this worked out really good.
