Red Pepper Jelly

2 c. ground sweet red peppers (about 3 large peppers)
5 1/2 c. sugar
1 c. distilled vinegar
1/3 c. lemon juice
1 bottle liquid pectin

Place red peppers, sugar & vinegar in kettle; heat rapidly to boiling, stirring continuously. Remove from heat, let stand 15 minutes. Reheat to boiling, add lemon juice. Let it come to a boil, then add the pectin. Boil for 5 minutes, stirring constantly. Bottle as any jelly.

This recipe makes about six small jelly jars. This recipe is one that my Dad found years ago in a magazine and tried. We have been making it ever since. It is delicious.
