Oatmeal Raisin Cookies

      3/4 c. soft shortening
      1 c. brown sugar
      1/2 c. white sugar
      1 egg
      1/4 c. water
      1 t. vanilla
      1 c. raisins
      1 c. flour
      1 t. salt
      1/2 t. baking soda
      3 c. oatmeal

Beat shortening, sugars, egg, water and vanilla until creamy. Mix flour, soda & salt. Add dry ingredients to creamy and blend well. Mix in raisins, then stir in oatmeal. Drop by teaspoon onto greased cookie sheet. Bake at 350 degrees (F) for 12 to 15 minutes.

Variations: Can substitute 1 c. granola for 1 of the cups of oatmeal. Or can substitute dates, coconut, or choclate chips for the raisins.

I got this recipe from my next door neighbor and dear friend, Linda. I think this recipe makes some of the best oatmeal cookies around. My husband loves these, and so do all my girls' boyfriends.
