
3/4 c. TVP (textured vegetable protein), slightly moistened
1 onion, chopped fine
2 large cloves garlic, minced
2 T. canola oil
4 oz. sharp white cheddar, cut into 1/2" cubes
1 c. whole wheat bread crumbs
1/4 c. plain yogurt
1 egg
salt & pepper to taste
2 oz. grated sharp cheddar cheese
Combine all of the above ingredients, except for grated cheddar cheese. Place in greased bread pan or small casserole. Sprinkle grated cheddar on top.
This is another great leftovers dish; and it is terrific straight from the oven. Also makes great sandwiches on whole wheat or rye bread.
