Sweet and Sour Lentil Casserole

1 cup dry lentils
1 clove garlic, chopped
1/4 cup tamari or soy sauce
1 large carrot, thinly sliced
1 small sweet pepper, chopped
4 bunches scallions, thinly sliced round
3 T. honey
1/3 c. white vinegar
1 t. grated fresh ginger
2 oz. fine egg noodles
1 T. dark sesame oil
2 T. water
salt or extra tamari sauce to taste

1. Wash lentils in several bowls of water until clean; make sure to remove all stones. Place lentils in pot, cover with water. Cook in covered pot until lentils are tender but still firm.
2. Mix tamari sauce, honey vinegar, and ginger together; set aside. Cook noodles according to package directions and drain.
3. Heat sesame oil and water, saute garlic and carrot for 3 to 5 minutes, until carrots are almost tender. Add pepper and scallions, and cook until scallions are barely wilted, about 2 minutes.
4. Add cooked lentils and liquid mixture, and cook for 10 minutes over low heat. Add noodles and mix together until heated through. Remove from heat, check seasoning, and serve.


This dish is just delicious. It makes a wonderful dish to take to a pot luck, because the longer it sits, the better it gets! It is a terrific surprise to people with its subtle flavors, and even people that "don't like that kind of stuff" find that they can like lentils.
