
1 bunch broccoli
2 c. whole wheat noodles
1 pint fresh mushrooms, sliced
1/4 c. butter
1 c. grated parmesan cheese
salt and pepper to taste
1/4 c. sharp white cheddar cheese (grated)
1 ripe tomato, cut in 8 wedges
In a large pot, boil chopped broccoli in water to 5 minutes. Add noodles and cook until tender (about 10 minutes more).
Meanwhile, in a small skillet saute mushrooms in butter.
When done, drain noodles and broccoli. Place back in large pot, add mushrooms and butter, parmesan cheese, salt and pepper. Toss to mix together thoroughly. Sprinkle with cheddar cheese and arrange tomato wedges on top. Serve.
