Chocolate Banana Cake

 

Ingredients

1.5 cups unsifted GFCF flour

1/2 tsp. salt

1/4 cup GFCF cocoa powder

1 t. baking powder

1 TBS. lemon juice

1/3 cup oil

1 tsp GFCF vanilla

1 cup pureed banana

slightly less than 1 cup cold water

 

1. Mix ingredients in order given.

2. Pour into ungreased  9 inch cake pan.

3. Bake in a 350 degree preheated oven for 20-25 minutes. (10-15 mins for cupcakes).

 

ICING IDEAS

A combination of any of the following till you get desired icing consistency.

 

  1. Cashew Butter/ Almond Butter / Any Nut Butter (for creaminess)
  2. Almond Milk/ Rice Milk/ Water (to make it more spreadable)
  3. Pureed Banana (for creaminess) – can also use any other fruit that is creamy when pureed.
  4. Cocoa Powder (to make it more like chocolate icing)
  5. Xylitol (Sugar Substitute – to compensate for the bitter cocoa taste)
  6. Oil (for more spreadability)
