Lanny´s Special Onion Soup - by Nancy Trapp
4lg. onions, chopped fine, 2 cans chicken broth
3T. bacon drippings, 2 cans beef broth
2T. flour, 1c. white wine
1/2tsp. salt, 2T.cognac
1/8tsp. pepper, French bread
1 clove garlic, mashed, Swiss cheese
Pinch thyme, Parmesan cheese
In a large saucepan, heat bacon drippings. Add onions and cook over medium heat until soft. Add: flour, salt, pepper, and garlic. Cook slowly until mixture is golden brown. Add both broths, thyme, wine and simmer for 3/4 hour. Add cognac. To serve: put dice of French bread in each bowl, top with Swiss cheese. Pour soup in a bowl over bread and cheese. Sprinkle with Parmesan. Place under broiler until cheese melts. Serves 6.
