Tomato, Bacon & Chive Quiche

Ingredients:
Pastry:
8½ ounces plain flour
4½ ounces chilled butter, cubed
2 tablespoons cold water
Filling:
5½ ounces bacon rashers, chopped
9 ounces crème fraîche
3 eggs
5 cherry tomatoes, quartered
1-2 tablespoons chopped chives
5½ ounces grated cheddar
Salt, pepper
Directions:
Put
the flour and butter into a large bowl and mix the butter into the
flour, adding 2 tablespoons of cold water as you go to make a smooth
dough. Roll out the dough and press it into a flan dish. Place in a
refrigerator for an hour.
Fry the chopped bacon in a little oil
for a minute or two, stirring all the time to keep from burning. Remove
from the heat and set aside.
Whisk together the crème fraîche
and eggs, season with salt and pepper to taste. Stir in the tomatoes,
chives, 2/3 of the grated cheese and and the bacon.
Pour the mixture into the chilled base, sprinkle with the remaining cheese and bake at 400 for 40 minutes or until done.
Serve with a green salad for best results.
