Swiss Cheese Petit Choux

Ingredients:
1 cup water
1/2 cup vegetable oil
1 cup flour
4 eggs
1/2 cup finely diced Swiss cheese
Vegetable oil (for frying)
Directions:
Heat oven to 400 degrees F.
Place
1 cup water and 1/2 cup oil in a small saucepan. Heat to a rolling
boil. Remove from heat and quickly stir in flour. Stir vigorously over
low heat until mixture forms a ball, about 1 minute.
Remove from heat. Add the eggs and cheese, beat until smooth.
Heat
oil (3 to 4-inches) in heavy kettle to 375 degrees F.** Drop batter by
teaspoonfuls into hot oil. Fry just until golden brown. Serve warm with
Christmas Confetti Dip.
*Self-rising flour may be used.
**VARIATION - BAKED:
Batter
can be dropped by heaping teaspoonfuls onto ungreased baking sheet.
Sprinkle tops with 1/2 cup finely diced Swiss cheese. Bake 20 to 25
minutes.
Makes about 60 puffs
