Pumpkin Oatmeal Muffins

These muffins are so good anytime.  They really don’t need frosting on them but you could add cream cheese frosting.  These muffins would be great for breakfast or a child’s lunch box.  I love the pumpkin flavor with the spices and oatmeal.
 
Ingredients:
 
1 Spice Cake Mix (18.25 ounce size)
1 cup quick-cooking oats, uncooked
1/4 teaspoon ground ginger
2 eggs
1 cup milk
1 cup 100% pumpkin
2 bananas, mashed
1 teaspoon vanilla extract
1 cup raisins
1 cup nuts (your choice)

 
Directions:

Place the oats, ginger, and the cake mix in a large mixing bowl and combine well with a whisk.
 
Add the eggs, milk, pumpkin, bananas, and vanilla into the cake mix and mix until all the ingredients are completely mixed into the batter. Make sure to scrape the sides of the bowl often while mixing.  Fold in the raisins and nuts.
 
Fill cupcake papers 3/4 full.
 
Bake in preheated 350 degree oven for 18 to 20 minutes, or until done.
 
Makes about 30 muffins.
