Sugar Cookie Lollipops

Ingredients:
1 1/2 cups sugar
1 cup shortening
2 eggs
1/4 cup light corn syrup
1 1/2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Craft sticks
Directions:
Combine
the sugar and shortening in a large bowl and beat at medium speed with
electric mixture until well mixed.
Add the eggs, corn syrup and vanilla and beat until well blended and fluffy.
Gradually add the flour, baking powder and salt to creamed mixture at low speed making sure to mix until well blended.
Wrap
dough in plastic wrap and place in the refrigerator. Chill the dough
for at least 1 hour before using. Keep refrigerated until ready to use.
WHEN READY TO BAKE:
Preheat the oven to 375 degrees F.
Cover a baking sheet with parchment paper.
Shape
the dough into walnut-size balls and push the craft sticks into the center of each
ball.
Place the balls onto the baking sheet 3-inches
apart, with stick parallel to the baking sheet, and flatten the cookies into 2 1/2-inch circles.
Bake the cookies for
8 to 10 minutes, or until slightly browned around the edges. Do not
over bake!
Let the cookies cool on baking sheet for 5 minutes before placing on wire
rack to cool completely.
When cookies are cool, decorate them as you wish and place the cookies in an airtight container until served.
