Sausage and Onion Quiche

Ingredients:
Pastry:
8½ ounces plain flour
4½ ounces chilled butter, cubed
2 tablespoons cold water
Filling:
8 sausages
2 tablespoons oil
1 onion, halved and sliced
1 pepper, cut into strips
7 ounces milk
3 tablespoons crème fraîche
3 eggs
4 ounces grated cheddar
Salt and pepper
Directions:
Put
the flour and butter into a large bowl and mix the butter into the
flour, adding 2 tbsp of cold water as you go to make a smooth dough.
Roll out the dough and press it into a flan dish. Put in a refrigerator while you make the filling.
Preheat the oven grill and grill the sausages until golden and cooked through, cut into thick slices.
Heat
the oil in a large pan while the sausages are cooking and add the
onion, cook for 5 minutes. Add the pepper strips and cook for 5 minutes
longer.
Whisk together the milk, crème fraîche, and eggs. Season with salt and pepper to taste and stir in the grated cheese.
Preheat the oven to 350 and pierce the base all over with fork. Bake for 5 minutes.
Spread the onions, peppers and sausage slices onto the pre-baked base and pour the egg mixture over them. Bake for 40 minutes or until golden.
