Mini Omelette Bites

Ingredients:
1 tablespoon oil + extra for greasing pan
5 mushrooms, finely chopped
3½ ounces broccoli, finely chopped
4½ ounces sweetcorn
5 tablespoons crème fraîche
4 eggs, lightly beaten
3 ounces grated cheddar
Salt, pepper
Directions:
Preheat the oven to 350 and grease well a 12-hole muffin pan (or use silicone muffin cases).
Heat 1 tablespoon of the oil in a pan, add mushrooms and fry for 4 minutes, stirring occasionally.
Add the broccoli and cook for further 4 minutes.
Add the sweet corn and divide the vegetable mix between the muffin cases.
Mix together the crème fraîche, eggs, and cheddar, season and pour over the veg.
Bake for approx 20 minutes, until the eggs are set.
