Pea Salad

Ingredients:
 
1 bag of uncooked blanched peas
1/2 lb fine cut bacon
6 or 7 hard boiled eggs, chopped
1 nice size onion, finely chopped
Mayonnaise to taste
1 cup cubed Colby Jack cheese

 
Directions:

Bring the peas to a boil, drain and cool with cold water. Place all the ingredients into a mixing bowl and mix with a spoon until everything is coated well. DO NOT USE A MIXER, you want the peas to remain as whole as possible.
 
You can use as much Mayonnaise as you want, but you want enough to coat and hold everything together without it overpowering the dish.
 
Can be served warm or chilled.
