Grilled Potato Packets

Potatoes require a little extra time on the grill, so remember to give these pouches first dibs on the flames.
 
Ingredients:
 
7 medium red potatoes
6 slices of fully cooked bacon, chopped
1/4 cup thinly sliced green onions
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 cup (4 ounces) shredded cheddar cheese

 
Directions:

Cut the potatoes into wedges. Combine the potatoes, bacon, onions, salt and pepper in a large bowl. Divide the mixture between two double thicknesses of greased heavy-duty foil (about 18 in. square) and dot with butter.

Fold foil around mixture and seal tightly. Grill over medium heat for 40-45 minutes or until potatoes are tender, turning once.

Carefully open foil and sprinkle with cheese. Grill for 3-5 minutes longer or until cheese is melted.
