Gluten Free Egg & Bacon Muffins

Ingredients:
 
5 x rashes Gluten Free bacon
4 x pieces of broccoli or broccolini
4 to 6 free range eggs
Pepper and salt

 
Directions:

Preheat oven to 200 degrees.

Grease the insides of a large muffin tray, a 4 Muffin tray works best.

Cut the bacon to size and line around the edge of the 4 individual muffin holes including the base.

Place a piece of broccoli into the center of each muffin hole.

Whisk the eggs together with a little salt and pepper to taste and pour the egg mixture into the muffin holes, just covering the broccoli.

Place into the oven and cook for approximately 15 minutes, use a spoon to remove them from the muffin tray once cooked.
