Really Easy Pumpkin Pie

Ingredients:
1 cup canned pumpkin puree
1/2 cup biscuit mix
1/2 cup sugar
1 cup evaporated milk
1 tablespoon butter or margarine, softened
1 1/2 teaspoons pumpkin pie spice
1teaspoon vanilla
2 eggs
Whipped topping, if desired
Directions:
Preheat the oven to 350 degrees and grease a 9 inch pie plate.
Place all
ingredients except for the whipped topping in a large mixing bowl and
stir or beat with an electric mixer until blended. Once everything is
mixed well, pour the mixture into the pie plate.
Bake 35 to 40 minutes or until knife inserted in center comes out clean. Remove from the oven and let cool for 30 minutes.
Refrigerate for 3 hours or until chilled.
Serve with the whipped topping and store any uneaten pie in the refrigerator.
