Chicken Burgers

This is an easy recipe to make and is perfect for a cook out, a picnic, or even to take to work for a good, healthy lunch!

Ingredients:
 
4 chicken breasts, diced
6 spring onions, chopped
2 tbsp fresh coriander, chopped
1 tbsp lemon juice
2oz fresh breadcrumbs
1 apple, peeled, cored and diced
1 egg, beaten
Salt, pepper

 
Directions:

Blend the chicken, onions, coriander, and lemon juice in a food processor until everything is finely minced.

Transfer the mixture to a mixing bowl and add the breadcrumbs, apple and egg. Season the mixture and mix well.

Shape the mixture into 8 large burgers and put onto a plate. Place the plate into
a refrigerator to let the patties chill for at least 30 minutes.

Preheat a grill to a medium heat and place the burgers on a lightly greased baking tray. Grill for 6-8 minutes on each side until the patties are golden brown and cooked throughly.
