Sweet Potato Casserole

Cooking tips for sweet potatoes located at the bottom of the page.
 
Ingredients:
 
Cooked Sweet Potatoes
1/4 to 1/2 cup brown sugar
Butter or Margarine
Marshmallows if desired

 
Directions:
 
Let sweet potatoes cool completely and cut into large slices, either length wise or side to side. Arrange slices of sweet potatoes in baking dish. Sprinkle brown sugar over potatoes, covering them with a thin layer. Dot with butter or margarine. If multiple layers are desired, repeat potatoes, brown sugar, and butter/margarine steps. Bake at 400 degrees for 30-45 minutes.

After Baking the casserole, if desired place marshmallows on top of cooked sweet potatoes and place back into oven until marshmallows melt and are light brown. Mini Marshmallows work best for this as using the mini marshmallows reduces the thickness of the marshmallow and allows for more even cooking.

The thickness of the sweet potato slices will depend on personal preference. Larger slices will result in fewer layers. Smaller slices will result in more layers. I would not recommend slices larger than an inch thick to allow for seasoning the sweet potatoes with the brown sugar and butter.

Use 2 cups of cooked sweet potatoes if using 1/4 cup brown sugar and approximately 1/2 a stick (4 tablespoons) of butter or margarine. Use 4 cups of cooked sweet potatoes if using 1/2 cup of brown sugar and approximately one stick of butter or margarine (8 tablespoons).

I threw something together the other day that I ended up loving. My friend had made a ham and some fresh green beans and had asked me to make a side to go with it. So I baked some sweet potatoes, then I peeled them, and mushed them up. Then I added butter, brown sugar, crushed pecans, and (drum roll, please) cheesecake flavored cream cheese. Then I put it in a dish and toasted mini marshmallows on top. Holy Heaven!!!! It was awesome. You should try it.

 
 
Cooking Sweet Potatoes
 
I found these on the web and have simplified their descriptions to a more understandable format.

Baking sweet potatoes

Before cooking, wash the sweet potatoes completely.
Brush each potato with vegetable oil.
Preheat over to 400 degrees F.
Pierce the skin with a fork in several places, but not completely covering the potatoes with holes.
Place on oven rack or cookie sheet and bake for 40-50 minutes until tender.
Remove from oven and prick with fork while holding the potatoes with a thick rag or oven mitt to release steam. BE CAREFUL NOT TO BURN YOURSELF ON THE STEAM!!!

Microwaving sweet potatoes

Before cooking, wash the sweet potatoes completely.
Pierce the skin with a fork in several places, but not completely covering the potatoes with holes. This is to keep them from exploding while cooking.
Place the potatoes on a paper towel in microwave oven.
Cook two medium sweet potatoes on high for 6-8 minutes.
I have only cooked 2 sweet potatoes at a time; cooking more at one time will obviously take longer.

Boiling sweet potatoes

Before cooking, wash the sweet potatoes completely.
Pierce the skin with a fork in several places, but not completely covering the potatoes with holes.
Place whole potatoes in a large pot.
Cover the sweet potatoes completely with water.
Boil approximately 30 minutes for 5 medium sweet potatoes.
