Ambrosia Punch

Ingredients:
Ice Ring (optional, recipe below)
2 cups Apricot Nectar, chilled
2 cups Orange Juice, chilled
2 cups Unsweetened Pineapple Juice, chilled
1 (15 ounce) can Coco Lopez Cream of Coconut
1 and 1/2 cups Light Rum (optional)
1 (32 ounce) bottle of Club Soda, chilled
Directions:
Prepare ice ring in advance if desired.
Combine all ingredients in a punch
bowl except the ice ring and the club soda, mix well.
Just before serving, add the club soda and the ice ring or a block of ice to
keep chilled.
Ice Ring
Fill a ring mold that will easily fit in the punch bowl you will be serving the punch from with water to within 1 inch of
the top of the rim and freeze solid. Arrange grapes, apricot halves, mint leaves,
maraschino cherries or other fruits on top of ice. Pour a small amount
of cold water over the fruit and freeze ring again to set the fruit onto the ice ring.
