Soft Sugar Cookies
1½ C sugar
1 C shortening
3½ C flour
¾ C milk
½ t salt
1 t baking powder
1 t baking soda
2 eggs

Preheat your oven to 350º. Mix the shortening and sugar first, as they combine rather easily. Now mix your remaining ingredients in the order you desire, but keep in mind that this will be a laborious task, as cookie dough is pretty dense. This is a branching point.

If you just want basic cookies, you can either pinch them out of the dough ball, or roll the dough out and cut the cookies out with a cookie cutter, and place them on the parchment paper on your cookie sheets, then bake each for about 8 minutes. Remember that cold cookie sheets will slow the baking process slightly. You can of course re-use the parchment paper as you continue to place more cookies on the sheets.

If you want to fancy up your cookies, here's how you would make spiral cookies:

Mix your dough in two separate bowls, coloring and flavoring each separately. If you want butter flavor, I recommend using butter flavor shortening, as actual butter changes the chemistry of the cookies, and may make them harder. When you have your two batches made, roll each out into rectangles of equal size, then lie one atop the other. Roll them up, and then roll this large roll out, making it longer until the roll is about the diameter of a silver dollar. Or, if you don't have one of those, maybe a bit larger than the diameter of a circle made with your thumb and middle finger. Divide this long roll into segments that will easily fit into your freezer, and wrap them in wax paper. Freeze overnight, and then you can slice cookies off of each of the rolls, optionally dunking one side into a cup of sugar crystals, sprinkles, or any other appropriate topping. Place the cookies on the parchment paper on your cookie sheet(s), and bake for about 8 minutes. As mentioned above, cold sheets will slow the baking process, so the first time a sheet goes into the oven, it may need a minute or more longer.

Place your cookies on a rack to cool, as they will be somewhat soft and flexible as they come off of the parchment paper. When they have cooled, they can be stored as desired.

Recommended flavor combos are pretty much anything and vanilla, particularly root beer or orange. If you want to go nuts, try butter and blueberry, if you can even find blueberry flavoring.
