Scotch Shortbread

3/4 cup margarine or butter, softened

1/4 cup sugar

2 cups all-purpose flour

Preheat oven to 3500 degrees. � Mix margarine and sugar.� Mix in flour (using hands if necessary).� If dough is crumbly, mix in 1 to 2 tablespoons margarine or butter, softened.� Roll dough about 1/2 inch thick on lightly floured board.� Cut into small squares, rectangles, diamonds, or triangle shapes.� Place about 1/2 inch apart on ungreased cookie sheet.

Bake until set but now brown, about 20 minutes.� Immediately remove from cookie sheet, cool completely.� Store in tightly covered container no longer than 4 days.

Makes about 2 dozen 1-1/2 x 1 inch cookies.
