Rumaki

1/3 cup soy sauce

1/4 cup sherry

1/2 lb chicken livers, washed and drained

1 can whole water chestnuts

10 bacon strips, cut in half

Combine soy sauce and sherry in a shallow glass dish.� Fold each liver around one water chestnut and wrap in a half slice of bacon.� Fasten with a toothpick.� Marinate in sherry and soy sauce mixture for 2 hours.� Broil for 7 to 10 minutes.� Serve hot with Chinese hot mustard as a side dip.

Makes 20 appetizers.
