Chile Rellenos Bake

2 cans (4 oz ea) whole green chile peppers

6 oz Monterey jack cheese

4 beaten eggs

1/3 cup skim milk

1/2 cup all-purpose flour

1/2 tsp baking powder

3/4 cup shredded cheddar cheese

1/2 tsp salt

Drain peppers; halve lengthwiseand remove seeds.� Cut jack cheese into stripsto fit inside peppers. � Wrap each pepper around a strip of cheese; place in greased 10 x 6 x 2 baking dish. � Combine eggs and milk; beat in flour, baking powder, and salt until smooth. � Pour over peppers.� Sprinkle cheddar cheese on top.� Bake in 350 degree oven for 30 minutes.

Serve with refried beans and spanish rice.

Makes 6 servings.
