Quiche for a Crowd

4-6 slices crisp, cooked bacon, crumbled

1-1/2 cups shredded Monterey Jack cheese

4 eggs

2 cups milk

2 Tbsp dried, minced onion

1-1/2 tsp salt

dash cayenne pepper

1 cup buttermilk baking mix

Sprinkle crumbled bacon and cheese evenly over the bottom of a greased 13 x 9 inch baking pan.� In bowl, beat eggs well.� Beat remaining ingredients into eggs.� Pour egg mixture over bacon and cheese.� Bake at 350 degrees for 30 to 35 minutes or until knife inserted 1 inch from center comes out clean.� Let stand 10 minutes before serving.�

Makes 35-40 appetizers.
