Mushroom Stuffing

12 Tbsp chopped onion

1 cup butter

16 cups dry bread cubes (approx 28 slices cut in 1/2 inch cubes)

1/2 cup celery (optional)

1 can (8 oz) mushrooms

1 tsp salt

1 tsp pepper

2 tsp poultry seasoning

1 tsp ground sage

8 to 16 Tbsp chicken broth

Cook onion and mushrooms in butter.� Combine with bread cubes and seasonings.� Toss with enough liquid to moisten to desired consistency.� Bake until crusty on top.

Makes 12 cups.
