MINESTRONE

1/2 lb. ditalini 2 oz. parmesan cheese

1 chopped onion 3T butter

2T. olive oil 3 stalks celery, diced

2 cups string beans, cut into small pieces 2 potatoes, diced

1T. chopped parsley 1 cup fresh peas

3 quarts boiling water salt and pepper

Cook onion in oil and butter about three minutes or until slightly brown. Add celery and potatoes and cook for ten minutes in covered pot. Add the water and cook 15 minutes more. Add string beans, peas, ditalini, salt and pepper. Cover and simmer for 20 minutes. To serve sprinkle with parsley and parmesan cheese.
