PEAS WITH EGGS
6 eggs
4 T. olive oil
1 onion, chopped
1 can tomato sauce
1 can peas
salt and pepper
Heat oil in large shallow saucepan, add onion; cook for 5 minutes over medium heat. Add tomatoes, peas, salt and pepper and cook for 5 minutes.
Drop eggs into sauce one at a time so they can poach in the tomato sauce. Cook slowly for three minutes or until eggs are done.
