This recipe is included because not only is it delicious, but it depicts peasant food perfectly. It was handed down by my grandmother just as it is written here. There are no amounts listed for anything because they used whatever leftovers they had on hand.

PANNA GUTTA                     EDITH NAPOLITANO

Onions, sauteed in oil until soft and brown.

Potatoes, peeled, cubed and boiled.

Italian bread, stale, broken into bite size pieces.

Put bread into a strainer with a pan underneath. Pour potato water over bread, saving water.

Mash potatoes and bread together, add onions, salt and pepper.

Add potato water as needed.
