A family favorite. We always awaited holidays because we knew gram would be making her delicious manicotti.

MANICOTTI SUE PICCOLO

Dough

6 large eggs

3 wine glasses of water

1/2 t. salt

1 - 1 1/4 cups flour

Beat with egg beater until smooth, adding flour slowly.

Cook in a greased #5 cast iron pan over medium heat.

Pour slightly less than 1/4 cup of batter into prepared pan and swirl until the bottom is coated. Let cook about 30 seconds and gently flip with a spatula.

Cook the second side about 3o seconds and remove from pan. Continue until all of the batter has been used.

Filling

1 pound ricotta cheese

1 egg, beaten

1/4 t. salt

1/4 cup Parmesan cheese

1/4 cup shredded mozzarella

1/4 cup chopped parsley

1/4 cup bread crumbs

Mix all together in a large bowl.

Preparation

Place about 1/4 cup of the filling into each shell. Roll and place seam side down into a large roasting pan that has been coated with gravy. Complete until all of the shells are used. Cover the top of the manicotti with gravy and bake in a 350 degree oven for 20 minutes.
