Everyone goes crazy for the Easter pies and they are so easy to make. The big joke in our house was always: If we all love them so much, how come we only make them at Easter time. I think the reason is because it is tradition. They would lose some of their special qualities if we had them more often. But, once a year, we have something to look forward to in the spring.

RICE PIE                             ANNA NAPOLITANO

1/2 cup cooked rice

6 eggs

2 cups ricotta cheese

1 shot glass whiskey

1 cup heavy cream

1/2 cup sugar

1/2 T. vanilla

 

Mix all ingredients well. Pour into a 9-inch pie shell.

Bake at 325 degrees for 45 minutes.

Makes two pies.

 

 

 

RICOTTA PIE

1 10 oz. jar maraschino cherries, drained

4 eggs

1 T. vanilla

1/3 cup sugar

1 1/2 lb. ricotta cheese

1/3 cup chocolate chips

Mix all ingredients together, adding cherries and chocolate last. Pour into a 9-inch pie shell and bake at 325 degrees for 45 minutes.

Makes one pie
